Typical cuisine of Maremma

In Grosseto you can sample all the dishes of the typical cuisine of the Maremma with such specialities as acquacotta (soup With Oil, Onion, Eggs, Herbs, Bread And Pecorino Cheese Literally cooked water) , la torta con acciughe (anchovy tart), la fricassea di agnello (lamb fricassee) , l’oca alla maremmana (duck, maremma style).

 

Game is ever present in cooking in the province of Grosseto, especially wild boar, woodcock, hare, pigeon and larks.

Amongst the famous specialities are mushrooms and sloes as well as cheeses, particularly ricotta and pecorino.
