I FORTINI Artisanal Cookies of Versilia

In their laboratory, few steps from Forte dei Marmi, the Fortini cookies are still produced today in an artisanal way, selecting the best ingredients in the world and without any preservatives.

The dough from which the Fortini will be made is rolled by hand and each Fortino is packed one by one after 48 hours of production.

 

 

 

Ingredients in detail of each type of cookie:

ALMOND (...my top favourite!)

100 gr. - 484 kcal

with the best Spanish and Italian almonds:

00 wheat flour, butter, sugar, almonds 7%, egg yolk

 

HAZELNUT

100 gr. - 491 kcal

with IGP Piedmont hazelnuts from the Langhe:

00 wheat flour, butter, sugar, 7% hazelnuts, egg yolk

 

LEMON

100 gr. - 442 kcal

with Sorrento lemon zest and juice, squeezed and grated by hand:

00 wheat flour, butter, sugar, egg yolk, zest and lemon juice 1%

          

CHOCOLATE CHIPS

100 gr. - 468 kcal

with 50% dark chocolate drops:

00 wheat flour, butter, sugar, 7% chocolate chips (sugar, cocoa mass, cocoa butter, concentrated butter, low-fat cocoa powder, emulsifier E322), egg yolk

 


 

 

CHESTNUTS AND CORN

100 gr. - 474 kcal

with chestnut flour and "formenton ottofile" corn from Garfagnana (Lucca):

00 wheat flour, butter, sugar, 9% chestnut flour, 9% corn flour, egg yolk

 

CEREALS

100 gr. - 455 kcal

with 5-grain flakes (rice, wheat, oats, rye, barley):

00 wheat flour, butter, sugar, 5 cereal flakes 6% (oats, rice, wheat, rye, barley), egg yolk

 

RAISINS

100 gr. - 445 kcal

with the best Turkish raisins from the Izmir region:

00 wheat flour, butter, sugar, 6% sultanas (grapes, vegetable oil (cotton), egg yolk

 

CRANBERRY

100 gr. - 460 kcal

with the best American and Candese cranberry:

00 wheat flour, butter, sugar, cranberry 7% (cranberry, sugar, sunflower oil), egg yolk

 

COCOA AND PINE NUTS

WHOLE WHEAT

100 gr. - 495 kcal

with stone-ground whole wheat flour from the Viva la Farina mill (Cuneo):

45% whole wheat flour, butter, sugar, egg yolk

 

WHOLEMEAL SPELLED

100 gr. - 474 kcal

with wholemeal einkorn spelled flour (small spelled) stone ground from the Viva la Farina mill (Cuneo):

46% wholemeal einkorn flour, butter, sugar, egg yolk

 

 

MIXED

DOUGH The shortcrust pastry of i Fortini is prepared in a slow and delicate way, using only centrifuge butter, flour, sugar and egg yolk ROLLING The Cookies are produced as they once were, rolled by hand, without the help of machinery or molds CUTTING AND COOKING After rolling, the Fortini are cooled for 24 hours, cut and then baked in the oven PACKAGING After cooking the Fortini are cooled to room temperature and finally packaged one by one in single portions
